The beer is muddy amber. Long-lasting carbonation releases first an airy head that burgeons one finger thick but dissipates hastily to a mediocre lace ring. Elderflower is identifiable to the nose. Wheat malt supports the floral fragrance decently. A bit of rhubarb escorts the twin components in a distance. The taste identity is undoubtedly sour. I find hefty wheat malt that is somewhat stuffy but actually not closed at all. I wouldn't call this fresh either but the reasonable sourness leaves a classy well-matured impression. Elderflower works beautifully in the taste. Other parameters that I wish to include in the list are grapefruit zest, lemon pith, passionfruit, a pinch of rhubarb and remote whitecurrant. Yeast goes boldly forward. Nevertheless, there's no farmhousey twist at all in this beer. The body is light-medium to medium. The finish is citrusy, passionfruity, floral, wheaty and a tad yeasty. Marginally sourer than upfront. The aftertaste gets covered by thousands of elderflower petals and harassed by a pail. The mouthfeel is stuffy, tart, acidic, springlike. Subtle, floral, fragrant and elegant, as well, would merit much slower enjoyment than now...
