Spontaneously fermented using wild yeasts in the brewery's traditional open cooling trays (the coolships) followed by ageing in oak barrels. Oak and fruit on the initial aroma precede a flavour of sharp apples and berries. Tannin from the oak underscores the finish as more fruit characters are revealed.
